Blue Lagoon


- Génoise:

150 g de farine
40 g de poudre d'amandes
5 oeufs
150 g de sucre semoule
40 g de beurre
vanille bourbon


- Sirop à la crème de cassis:

100 g de sucre semoule
100 g d'eau
2 t/s de crème de cassis


- Bavaroise aux myrtilles:

200 g de myrtilles
5 feuilles de gélatine ou 3 g d'agar-agar
2 jaunes d'oeufs
85 g de sucre semoule
8 cl de lait entier
10 cl de crème fraiche entière et liquide
vanille gousse

- Nappage Mimi+Bakery:

pour 100 ml d'eau
70 g de sucre semoule
4 à 5 feuilles de gélatine

quelques fruits rouges pour la décoration ainsi qu'une gousse de vanille...well...everything that could remind you a lagoon!

2 egg yolks
85g caster sugar
8 cup whole milk
10 cl of whole liquid cream
vanilla pod

- Topping Mimi+Bakery:

per 100 ml of water
70g caster sugar
4-5 sheets of gelatine

few berries for decoration and a vanilla bean ... well ... Everything That could remind you a lagoon!
